Recipe: Chickpea Rice Soup w/Cabbage

Very easy to make and insanely healthy if you skip out on using oils. Often, I will cook the onions in vegetable broth rather than oil in order to make an already healthy recipe even healthier.
It’s important to note that with this recipe, the flavor balance is key. It’s always tempting for me to add extra garlic and in many recipes I can get away with it. With this soup, however, I’ve found it best to stick to what’s asked for.
The leftovers freeze and thaw quite nicely, so it’s a perfect recipe to do ahead and tuck away in the freezer for a rainy day. I like to set aside lunch-sized portions to bring to work.
