Key Ingredients: white kidney beans, onion, kale, carrots, celery, tomatoes, garlic and a broth + water combination. Seasoned with salt, pepper, bay leaves, and rosemary.
This is a flavorful and filling recipe that you start on the stovetop and finish off in the oven.
The original version I cooked ( as depicted in the above image ) contained pancetta and called for chicken broth. America’s Test Kitchen has a similar recipe for a soup version, which omits the animal products.
Both versions are delicious, though if you do use pancetta be sure to get some that’s thickly cut. The pancetta I had was thin like bacon and didn’t add much to the stew beyond saltiness.
